以α-氨基氮和多糖含量为指标,通过单因素试验和正交试验探讨了纤维素酶、木瓜蛋白酶水解香菇菌柄、菌盖的工艺条件.结果表明,菌柄的最适水解条件为:纤维素酶0.15%,木瓜蛋白酶0.45%或0.3%,初始pH 4.5,时间4 h,温度45 ℃;菌盖的最适水解条件为:纤维素酶0.15%,木瓜蛋白酶0.45%,初始pH 4.5,时间2 h或3 h,温度55 ℃.α氨基氮含量可达4.219 mg·g -1,多糖含量可达224.86 mg·g -1.
- Abstract:

The enzymatic hydrolysis process of cellulose and papain for cap and stipe of Lentinula edodes was studied with the contents of α-amino nitrogen and polysaccharide as marker by means of single factor experiment and orthogonal tests. The results showed that the optimal hydrolysis conditions for cap of L.edodes were that cellulose,papain,initial pH,time and temperature are 0.15%,0.45% or 0.3%, 4.5, 4 h and 45 ℃, respectively. And the optimal hydrolysis conditions for stipe of L.edodes were that cellulose, papain, initial pH, time and temperature are 0.15%, 0.45%, 4.5, 2 h or 3 h and 55 ℃, respectively. The content of αamino nitrogen and poly saccharide can reach 4.219 mg·g-1 and 224.86 mg·g-1.
